Some of these calls are very niche.

Unidentified funny objects, speculative fiction starring animals, stories about airports and airline workers and much much more.

I laughed at a similarly weird and specific anthology sub call a couple of months ago, then ended up writing something for the hell of it. I got an acceptance. Just waiting on contracts now. Imagine that, me, getting genre fiction published!

All this is to say, very specific themed calls give a good chance of publication if you can write something good that meets the criteria.
